yummy coconut cookies !!




I just love baking cookies...its simple ...its pleasant ...and it smells heaven!
Once you start baking cookies you'll just forget store bought and packed cookies.The best thing is that  you can make these with your own choice of ingredients keeping in mind your taste and health..Baking cookies and stocking them for the week gives real pleasure.
So here are my cute and yummy coconut cookies !!!

Ingredients
  • 1 cup (150g) self-raising (self-rising) flour
  • 1 cup (80g) desiccated coconut
  •  ½ cup (90g) brown sugar
  • 100g butter, melted
  • 1 egg, lightly beaten
Method 
     Preheat oven to 190°C (375ºF). Place the  flour, coconut and sugar sugar  into a bowl and mix to combine. Add the butter and egg and mix again. Shape 2 tablespoons of the mixture into flat rounds and place on baking trays lined with non-stick baking paper. Bake for 10-15  minutes or until golden. Cool on trays.

    * To check if the cookies are done, look at the bottom not the top. If you wait until the top looks right you risk overcooking them. To check, lift a cookie with a spatula so you can see underneath. The bottom should be deep golden. Cool on trays as the cookies will continue to cook after you've removed them from the oven.

    breakfast special~healthy mushroom toasts !!


    Breakfast is the most important meal of the day coz this is what gears you up for the whole day....and it has the highest probability of becoming monotonous coz its early morning and you do not engage yourself in difficult and tiresome cooking rather go for easy and quick options.
    80% of the time our breakfast constitutes  eggs and bread and cereals of course.
    So I always keep looking for different alternatives which can make a healthy breakfast.
    While coming back from India I got this book from the airport.."Nita Mehta's Diet recipes"and quite surprisingly I didn't tried any dish from the book..
    So finally I tried something which sounded a great breakfast option.
    I tried this recipe of mushroom toasts which came out really nice and will definitely constitute our breakfast on a regular basis.



    Ingredients

    8 Bread slices-toasted
    150 gm mushrooms (chopped)
    2-3 garlic cloves-crushed
    1 onion (chopped)
    1 tomato (chopped)
    1 green chilli (chopped)
    1tbsp chopped coriander
    1 tbsp tomato ketchup
    Salt and red chilli to taste


    Method

    • Heat the oil and stir fry the garlic and onions for one minute
    • Add the tomatoes and stir again for a minute.
    • Add the green chilli,coriander and chilli powder.Stir for 2 minutes.
    • Add the mushrooms and salt .Cook for 3-4 minutes.Add ketchup and mix.
    • Spread the mixture on top of toasted slices.Serve hot.


    Enjoy this low cal snack and give a new twist to your breakfast !!!

    tribute to grandma on makar sankarnti ~ sesame burfi !!




    WISHING EVERYONE A HAPPY  AND PROSPEROUS MAKAR SANKRANTI !!!

    Also called Khichdi in our northern India tradition because on this day the custom to eat Khichdi , is generally observed by people.In addition to Khichdi, great importance is attached to the use of TIL (Sesame seeds) during Makar Sakranti. 

    This blog post is dedicated to my  late Grand ma ..my Dadi.She was an excellent cook.. kitchen queen...so much so that her afternoons were spent inventing and re-inventing dishes in the kitchen.Her sweets specially laddus were unbeatable......as a kid I often used to  ask her"Dadi why dont you open a sweet shop??"
    I still remember those summer vacations..listening to endless  stories/tales from Dadi and relishing all those dishes  cooked by her.
    When talking about Khichdi she used to cook a whole bouquet of divine sweets from sesame burfi to laddus .....among  all those sesame burfi was my favourite...I wish I was big enough to ask her the recipe then...so while net surfing I came across this recipe which sounded that would yield the same result...so here I am sharing the recipe of sesame burfi !!
     
     
    Ingredients
    • 1 cup double cream
    • 1 cup milk powder
    • 3/4 cup sesame seeds
    • 1/2 cup sugar
    • 1/8 teaspoon cardamom powder
    Method
    1. Roast sesame seeds over medium heat till they are golden in color.Keep aside.
    2. In a  pan add cream and milk powder mix it well over medium-high heat.
    3. Stir continuously till the mixture starts to bubble.
    4. Lower the heat to medium and keep stirring  until mixture is reduced to thick paste and starts coming together.Your homemade khoya is ready.
    5. Add roasted sesame seeds and mix well. Stir for another 2-3 minutes until mix start looking soft dough.
    6. Lower the heat to low and add sugar and cardamom powder and mix it well. Mix will become little soft in texture after adding sugar.
    7. Keep stirring for 1-2 minutes and bring the burfi back to dough texture.
    8. Spread burfi mixture onto the greased plate/ non-stick baking paper . Let it set for two hours at room temperature. Cut burfis to desired shape.
    9. Enjoy this festival with this burfi and take some time to remember and cherish your childhood coz its the most priceless time of one's life .

    NAAN + PIZZA = NAANIZZA !!!

    Food delivery straight to your door.. on time.. every time. Its such a cool thing which makes our life so easy right ?
    I had this funny and weird habit of collecting home delivery pamphlets when living in Delhi...When living away from home for studies you do resort to ordering outside food .... specially in a place like Delhi where you have innumerable options for students at reasonable prices from north Indian to Chinese to south Indian ...!!So when bored of the usual food this is what we used to do...just dial and order!!
    And now in London we had some not so good experiences  of  restaurant Indian food  so we seldom order Indian and prefer Mexican or Italian instead....
    But the other day we ordered Indian food for a change...and then we had some left overs too...so I tried this with my naan left overs ...

    Well I must admit that I haven't seen a better dish from leftovers than this one
     Leftover Naans can be made into perfect pizza in just a few minutes!!!



      For Naanizza you need


     4 Naans
    3 tbsp pizza sauce
    4-8 thin slices of mozzarella
    4-5 babycorns(boiled and sliced)
    6-8 olives
    2 tbsp sweetcorn
    Salt and pepper
    Oregano

    Take naan and spread the pizza sauce.Top it with all the veggies and cheese.(You can add your choice of veggies).Add seasoning.Bake it for 10-1 5 minutes.

     Pizza sauce 
    In a pan take some olive oil.Add chopped garlic.Add tomato paste.Cook it till oil separates.Add basil  oregano,salt and pepper.




    Enjoy this simple and quick recipe using your leftovers!!
