I just love muffins....during my MBA times I was so crazy about muffins that my friends used to call me muffin...jst imagine !!!
I came across this easy and perfect muffin recipe the other day when I was watching donna hay's show- fast fresh and simple.
The best thing about this recipe is that you have innumerable options to play around for flavour...you can make blueberry,cranberry,fruit and nut ,chocolate chip muffins....the list is endless....
I made these muffins for our first anniversary....!!!
- 2 1/2 cups Self raising flour
- 1 tsp baking powder
- 1 cup caster sugar
- 1/2 cup vegetable oil
- 1 egg
- 1/2 cup milk
- 1 tsp vanilla extract
- Your choice of flavour/fruits : I used blueberries,cranberries and dry fruits for three types of muffins
Place the flour, baking powder and sugar in a bowl. Place the oil, egg, milk and vanilla in a separate bowl and whisk to combine. Pour the liquid ingredients into the dry ingredients and mix until just combined. Add the fruit and mix to combine. If you are using more than one fruit then divide the batter in separate bowls and mix fruits.That's what I did for three types of muffins.
Spoon mixture into muffin moulds and bake for in a preheated oven at 180 C for 25 minutes or until cooked when tested with a skewer.
