All good things start with something sweet so here's my first post this year-FESTIVE FRUIT CAKE !
You would just love his incredibly easy fruit cake as it requires little effort and yet tastes great.
This recipe is taken from the book Nigella Christmas.I have made a few alterations though.This cake is rich in flavours and filled with fruit in every bite. All the fruits,honey and orange zest together create real magic in this cake.
Here's the recipe :
175 g muscovado sugar
150g plain flour
200 g mixed dry fruits
3 eggs beaten
75g ground almonds
150 ml honey
1 tsp mixed spice
1/2 tsp baking powder
1/2 tsp bicarbonate of soda
Butter cream frosting
Put the fruits,butter,sugar,honey,orange juice and zests,spice into a large wide saucepan and gently bring to the boil,stirring as the butter melts.
Simmer the mixture for 10 minutes,then take off the heat and leave to stand for 30 minutes.
After 30 minutes add the beaten eggs,flour,ground almonds,baking powder and bicarbonate of soda,and stir to combine.
Pour the fruit cake mixture into a greased cake tin.Bake it in a preheated oven at 160 C for 45 minutes-1hour.
For icing I used butter frosting and then sprinkled cashew praline mixture.It tasted good.
