I just love baking cookies...its simple ...its pleasant ...and it smells heaven!
Once you start baking cookies you'll just forget store bought and packed cookies.The best thing is that you can make these with your own choice of ingredients keeping in mind your taste and health..Baking cookies and stocking them for the week gives real pleasure.
So here are my cute and yummy coconut cookies !!!
- 1 cup (150g) self-raising (self-rising) flour
- 1 cup (80g) desiccated coconut
- ½ cup (90g) brown sugar
- 100g butter, melted
- 1 egg, lightly beaten
Preheat oven to 190°C (375ºF). Place the flour, coconut and sugar sugar into a bowl and mix to combine. Add the butter and egg and mix again. Shape 2 tablespoons of the mixture into flat rounds and place on baking trays lined with non-stick baking paper. Bake for 10-15 minutes or until golden. Cool on trays.
* To check if the cookies are done, look at the bottom not the top. If you wait until the top looks right you risk overcooking them. To check, lift a cookie with a spatula so you can see underneath. The bottom should be deep golden. Cool on trays as the cookies will continue to cook after you've removed them from the oven.
